Oven baked sea bream

Oven Baked Sea Bream, a delightful fusion of traditional West African flavours and modern flair. Fish recipes have always been my comfort zone, and this rendition of baked sea bream is no exception, boasting an explosion of intense flavours.

Drawing inspiration from traditional West African cuisine, where ginger, garlic, onions, and chili peppers are typically blended using a food processor or Asanka, I’ve stayed true to the roots of the dish while infusing it with my own creative expression. For me, preserving the authenticity of these incredible dishes is paramount, but that doesn’t mean we can’t add our own twist.

In this recipe, I’ve opted for a different approach by using a pestle and mortar to grind the spices, enhancing the flavours and adding a unique touch to the dish. The combination of earthy and fresh herbs elevates the aroma and taste to new heights.

And let’s not forget about the Meko, the Ghanaian pepper sauce that traditionally accompanies such dishes. Here, I’ve given it a fresh twist by transforming it into a Sala sauce, utilizing all the familiar ingredients but presenting them in a new and exciting form. It does not mean better, just different!

Ingredients:

For the Sea Bream:

  • whole Sea Bream, cleaned
  • 2 Onions
  • 5 cloves of Garlic
  • Ginger
  • 1 and a half Scotch bonnet peppers
  • Spring onions
  • Fresh thyme
  • Fresh Coriander
  • Sea Salt
  • Coarse Black Pepper
  • Smoked Paprika
  • Olive Oil


For the Meko (Fresh Chilli Pepper Salsa):

  • 2 fresh Tomatoes
  • 1/2 Scotch bonnet pepper
  • 2 cloves of Garlic
  • Ginger
  • Salt to taste
  • Olive Oil
